Green Quinoa Dinner
Quick, easy, and tasty meal prep!
Ingredients:
- 2 cups uncooked Quinoa
- 2 cups Water
- 3 Garlic cloves
- Veggie Broth (to cook the veggies in)
- 3 small Onion
- Asparagus (1 bunch)
- Broccolini (1 bunch)
- 3 cups Spinach
- 1 Lemon
Directions:
- Start boiling water and add quinoa, reduce to a simmer and cook for about 15-20 minutes.
- While the quinoa cooks, cut up garlic and set it aside.
- Cut up onions, asparagus, and broccolini up.
- Add onions, to a pan and cook in a splash veggie broth or water.
- Add garlic after cooking for a couple of minutes.
- Combine quinoa with onions and garlic.
- Boil asparagus and broccolini
- Add spinach to the pan at the very end and cook for a couple of minutes.
- Strain veggies
- Squeeze half a lemon to veggies
- Combine with quinoa mix and enjoy!
